Our Calvados are made from 2 different kinds of distillation : The youngest ones, are obtained through a process of double distillation of cider in a traditional copper still called “alambic à repasse” and get the AOC Pays d'Auge. The oldest ones, are produced by a single continuous distillation in a column still and get the AOC Calvados.
Pommeau de Normandie
Typical aperitif from Normandy, the Pommeau de Normandie is drunk chilled and can be used for cooking. Our Pommeau is made by the mutage of 2/3 of apple must with 1/3 of a young calvados. Aged in our cellars for a minimum of 24 months in oak barrels, in order it gets its amber color and fruity taste which made it very typical.
Ciders and Poirés
Our Cidre Bouché is made in the respect of traditional process making methods : first the apple are picked up to the right maturation manually or mechanically / washed / crushed / the pulp is put into a vat open air to give the juice its colour and to release its aroma / the pulp is then pressed within an average productivity of 650 most liters per ton of apples (productivity limited to 750 liters) / natural clarification of the most / slow alcoholic fermentation (1 to 3 months) / natural froth creation in the bottle (minimum 3 months).
